    Tasting Notes: Each year Canadian winemakers wait for the arrival of the winter's cold and the conditions that enable them to make their internationally renowned Icewine. And for the 2016 vintage, the cold came right on time in early January. The Cabernet Sauvignon grapes were all harvested in one day at temperatures of minus 1 l .5°C. The result of these freezing temperatures was a rich, concentrated Icewine. Exciting complex aromas erupt from the glass reminiscent of dried cherry, bramble fruits and hints of citrus intersperse with savoury herbs, tobacco and sweet mint. The rich, full and textural palate delivers similar flavours and boasts delicious sweetness, which is balanced by mouth­ watering acidity. Food Pairing: Delectable by itself, great with veiny cheese, dark chocolate torte or dates wrapped in bacon. Serve wine chilled at 6-8° C. Stored in a refrigerator, opened Icewine will keep for a month. When properly stored, unopened Icewine will last for a decade or more.
